TGIF!! Wow, I really am ready for the weekend! This week was just nuts!! Since it has been about 4 weeks since school has started those first tests are happening. I usually like to help the kids study for the first few tests, to get back in the swing of studying the right way again. It just sucks the energy right out of me! Along with the tests and planning the girls' birthday parties for the weekend, I'm just done! But I wanted to get one post out quick to maybe inspire some different meal ideas for you all for next week! We actually do eat meat, but we actually eat more meatless meals! Buying grass fed organic meat is just a bit expensive for our family. So it's become habit to just not have meat all the time! And we have all adjusted, even Nate on most nights, lol!
Last week I made some meatless meals, the first one is this pizza inspired sandwich.
I love buying local ciabatta bread becasue they use fewer ingredients than regular bread. We have had an abundance of tomatoes, so I had to figure out a way to use those in the meal. I sauteed some peppers and onions, sliced up some mozzarella, sliced tomatoes, jar of marinara sauce and some seasonings. I first toasted the bread open faced to firm it up a bit, put some marinara on each side, pepper mixture, tomatoes, motzerella and some salt, pepper and basil. I then toasted it open face again to melt the cheese. It was yummy and the kids loved the way the mozzarella stretched out when they ate it, lol! And the topping ideas are endless, mushrooms, black olives, or fresh basil.

This recipe I just made again on Wednesday night! I've been making it once a week for the past month to use up the garden veggies! And the kids cheer when I tell them we are having this lasagne! You may notice that the top layer is some white sauce, yes, I ran out of marinara because I used it in another recipe and had a little alfredo sauce leftover, so I just used it! It was actually pretty good!
Egg Muffin for those nights on the road with kids activities!
Our Wednesday nights are out of control, so I usually have to have something to eat right after school or something to eat in the car. An egg mcmuffin is something I always try to have on hand and I usually just have some fresh veggies on the side. This meal is very versatile too. I buy the sprouted english muffins, fry an egg and spread a little mayo or jalapeno mustard on the muffin. You can add a slice of cheese, a tomato slice, or avocado sliced. I buy my muffins from our local Green Acres or Natural Grocers store.
This next meal I used my bags of crockpot refried beans and black beans that I had made from dry beans and froze in bags. I will just pull them out in the morning or the night before to thaw out. Bean and cheese burritoes are super easy and a go to if I don't have meat ready for a meal.
So I mixed the beans, a bag of frozen corn, diced tomatoes from the garden, could use canned and some salt, pepper, garlic powder and cumin. I layed that mixture in an organic whole wheat tortilla and rolled up. Topped with some mild green chile sauce and some shredded cheese. Baked at 350 for 30 min or till warm.
Come fall and winter, I like to roast up lots of veggies for dinner and then just add a fried egg on the side. Sweet potatoes, broccoli, cauliflower and carrots are some of my go to roasted veggies. I also sautee a lot of mushrooms and onions to put on ciabatta bread with a slice of cheese! And we eat sliced avocadoes on the side.
