Quick Lasagne Soup

Hope everyone had a wonderful Valentine's Day!! I had people asking for this recipe I had made last weekend and posted to my stories, so I thought I would share it on the blog. I'm always in need of a fast, easy recipe the entire family will love! That is my mission every night, lol! I looked around at some recipes for lasagne and stumbled across lasagne soup. They all called for shredded cheese in their recipe and that is just not my favorite, because it melts all over the spoon and sticks to the sides of the pot and that just means more clean up for me! Plus I don't buy shredded cheese, so that meant a lot of shredding cheese from the block, not fun. They also had sauteed onion in theirs and let's be honest, I love oninon, but cutting it and sauteeing it, takes time. Something I don't have most nights after a busy day. So this is what I came up with for a fast dinner that only took 30 min and my boys helped make most of it!! I did use organic ingredients, but this does not have to be made using organic!





Lasagne Soup

1 lb. sausage (we used deer sausage) but any ground is fine

2 c chicken or beef broth plus 1 cup of water, more if you want it thinner

1 jar marinara or your favorite red sauce

1 28oz can of diced tomatoes plus juice, I used fire roasted

salt and pepper to taste

1 box lasagne noodles, broken in pieces

1/2 c milk or cream, I used whole milk

1 small container cottage cheese


Brown sausage in big stock pot, rinse if needed. Add in broth, water, sauce, tomatoes seasoning. Bring to boil, add in broken noodles and boil for 8-10 min until done. Stir in milk and cottage cheese. Serve with shredded cheese or garlic bread:)




It was so yummy, everyone had seconds and thought it was better than eating lasagne. And it was so easy and fast!! Enjoy and have a great weekend!!
